Delicious and easy ENERGY BALLS

We all want tasty snacks that are deliciously healthy, good for our gut, + quick and easy to prepare.
That’s where energy balls come in.
These little energy-packed bites are protein-rich, free of refined sugars and pack a serious nutrient power punch, delivering a host of vitamins, minerals & phytochemicals.
I have tried numerous recipes; however, this one is my all-time favourite and makes a great pre-workout snack before my training, providing a much-needed stamina boost and a muscle-building protein hit. So, I wholeheartedly recommend giving it a try.

Ingredients

 

 

100g medjool dates, pitted
50g figs, dried, cut into quarters
30g mixed nuts, e.g. walnuts, macadamia, hazelnuts, cashew nuts
20g blanched almonds
50g desiccated coconut
10g rice protein
10g cacao
5g cinnamon
15g coconut oil
20g maple syrup

Instructions

 

 

1. Set aside 20g of desiccated coconut
2. Put all the ingredients in a food processor and blend for about 30 seconds until the mixture is finely chopped.
3. Divide the mixture into 14 evenly sized portions, roll into balls and coat with the remaining desiccated coconut
4. Refrigerate for 1 hour before eating

Tips

 

As the mixture is sticky,  you may find it easier to divide the balls with wet hands. You can also use a measuring spoon to portion balls into desirable sizes. Keep refrigerated in an airtight container for up to 7 days.
